This is the real Italian Asiago. At least one version of it. Asiago d'Allevo is the aged version, while Asiago Pressato is young.
Sweet, buttery, slightly tangy, milky. Absolutely delicious.
But I think the version we got was more of an "export" version of Asiago Pressato than what I'd get in Italy. Many online resources describe this cheese as being much softer and fresher than what we got. Not that there's anything wrong with that, because this cheese was wonderful.
