I see this stuff being sold in several shops these days. But trying to find info about it online has provn 100% fruitless. So, since I get to be the only reference to it online - This is UnieKass Vintage 5-Year Old Gouda. The three year old version looks exactly the same, but it has a 3 rather than a 5.

We've had lots of aged gouda lately. Caramelly, complex, sweet, chewy. But we hadn't tried anything over two years old. well, I'd say this five year old version was just like the other aged goudas, just more so. Very upfront caramel flavor. Very complex. And chewy like no other cheese I've tried. Like candy almost. I like it.

Bottonline, this is a very interesting cheese. Certainly worth buying a wedge. And I'm looking forward to trying some dishes cooked with this cheese.
