Fontina Val D'Aosta is the real Fontina. Made from the milk of high altitude cows which spend their time in alpine meadows, the cheese is said to embody the flavor of the wild flowers and tender grasses of the Italian Alps. And while I find that idea slightly silly (wildflowers tend to be either bitter or tasteless), this certainly is a delicious cheese. Absolutely nothing like the rubbery Fontina I'm used to getting in the US mega-marts.
Earthy, woodsy, fruity, buttery, with a nutty finish. The flavor is assertive, but in a good way. Many sources say this is a perfect cheese for an Italian fondue, but I loved eating it plain. Sandwiches would also be pretty darn good.
Also, This of the few cheeses imported into America that is made from raw milk. I suspect that is one of the reasons for it's wonderful flavor.
