This is a "Swiis" style cheese from France which features a distinctive wheat pattern molded into the rind. It's also distinctive for being dusted with toasted wheat flour which supposedly contributes to the flavor.
This cheese has much more in common with American-style Swiss cheese than it does with real Emmental, but it's much better in flavor and texture than the mega-mart stuff. Compared to familiar mountain cheeses, the taste is sweeter and fruitier, and much less rustic and nutty. It's in-your-face cheesy and quite delicious. If you have some friends who insist on bemoaning the gross nature of French cheeses, this would be a good way to shut them up.
I find this to be a perfect sandwich cheese. The flavor is assertive enough to not be overpowered by the other ingredients.
Fol Epi might lose points for being a more "consumer" oriented cheese than the true Emmental it's inspired by. But taken on it's own this one yummy cheese.
