As ugly Americans we just call all cheese with holes "Swiss" cheese. And the imported Emmental I tried here failed to shake the generalization. It tasted like Swiss cheese. Slightly nutty. Slightly fruity. Very firm but not crumbly. Rather on the mild side.
I just ate the cheese plain, but I really think it needs a sandwich. A big slice of Emmentaler gets old very quickly on it's own.
One problem - The wedge I got had all the holes on the outside, and the wrapping had flattened them out a bit. So when I sliced up the wedge to try and get some dramatic photos with holes, there weren't any. Poop. So now I need to go find a more photogenic wedge. This will be a good chance to confound my local cheese merchant. "No. I don't care what it tastes like. I just need the holes."
