Perhaps reviewing Cotswald as the Double Gloucester [GLOSS-tuhr] cheese in the Monty Python skit is cheating, but so be it. Mr Mousebender doesn't ask for the Double Gloucester sans chives, so I say it counts damn it. We tried the Clawson version.
Cotswold is just Double Gloucester cheese that has chives added. Since Double Gloucester already has a creamy and zesty character, this is a great match. Almost like a really good sliceable cheese spread. Tangy, zesty, creamy, rich. I really liked it.
The cat liked it as well. In fact I'd say this is his favorite cheese.
Double Gloucester has a pretty cool history. There are various traditions involving rolling the cheese around churches and down hills, jumping up and down on the wheels, parading them around town, etc. This came largely from the cheeses leathery rind which made it travel much better. We just got a half pound wedge though, so we didn't get a chance to do any rolling.
