Bravo Farms makes two cheddars. One is a wax wrapped American style cheddar. The other - reviewed here - is an English style bandaged wrapped cheese.

Sort of....... Every reviewer I've found online says this is a cheddar. But Brazo farms website describes the cheese as a "Cantal Manchego cross" rather than a cheddar. Ripe Cantal has an assertive and grassy flavor, which is similar to what the Silver Mountain was like.

I have to say this wasn't one of my favorites. It was good, but I was expecting something else. There was an astringency I didn't really like, and the "pasture" character wasn't that yummy in my opinion. It certainly wasn't a bad cheese though. It has a very nice and unique handmade taste.
