Quicke Bandaged Wrapped Cheddar is one of the classics. Handmade by Mrs. Quicke herself on a small English farm from the milk of their own cows. Bandaged wrapped and aged or about a year.
Well..... Sort of. Actually the Quicke farm is over 2000 acres of farmland and woods, with around 340 cows. Quicke's is one of the largest Cheddar-making concerns. Still, the cheese is indeed handmade using methods that have been around for hundreds of years.
Quicke traditional tends to be younger than some of the other English artisanal cheddars. Medium sharp. Full flavored. Nutty and earthy.
