I haven't been able to figure out whether this counts as a washed rind cheese or not, but I suspect it does. At any rate, more investigation is in order.
I do know that Chaubier is a half goat-milk and half cows-milk cheese. Aged about 6 months. French. Slightly stinky. Semi-hard. Fairly mild. Generally cheesy.
I guess I don't have much to say about this cheese. It would be good on sandwiches or what not. But I didn't find it distinctive enough for formal nibbling. I certainly wouldn't turn it down, but I wouldn't seek it out either. But that's just me.
