Caerphilly is usually a very young crumbly cheese with a mild tangy flavor. We got the Duckett's Farm Caerphilly which is suppose to be darn good.
And I would say it was darn good. I just carved off a hunk and nibbled. I will say most descriptions say Caerphilly has a lemony tank, and I didn't taste much of that. Maybe our wedge was a bit too young. But at any rate it was very yummy. Crumbly, creamy, and a distinct milk flavor.
I used a bit of it in a four cheese macaroni and cheese and it seemed to add some really nice creaminess.
The cat couldn't be enticed to try it. Much too mild for him I'm sure.
